He began his career with Franck-Louis Broc (2002) and went on to the Restaurant Relais & Châteaux La Côte d’Or, working with Patrick Berton (2003-2004). In 2009, he left for the island of Anguilla to work as Executive Chef at the five-star luxury Cuisinart Resort Golf & Spa. In August 2012, the Cap Est offered him his position as Executive Chef. Elegance, subtlety and respect for each ingredient’s unique contribution are his watchwords in creating each of the dishes, prepared and served immediately due to the hydrometry. He and his team love simply prepared ingredients. He combines the boldness of French products and those of the West Indies, resulting in sophisticated fusion cuisine. Prawn, lobster, tuna, marlin, and snapper all serve as great sources of inspiration. The menu is ever-changing and spotlights the wealth of native products and traditions, expressed using local vegetables (yam, chayote, sweet potato) and tropical fruits (papaya, passion fruit, soursop, coconut, pineapple, and more).
