Elegance, subtlety and respect for each ingredient’s unique contribution are his watchwords in creating each of the dishes, prepared and served immediately due to the hydrometry. He and his team love simply prepared ingredients. He combines the boldness of French products and those of the West Indies, resulting in sophisticated fusion cuisine. Prawn, lobster, tuna, marlin, and snapper all serve as great sources of inspiration.
